I have used a charcoal grill all my life but not without frustration at the annoyance of flare-ups and hot or cold spots on the grill. No matter my attempts, if I let up a bit—I would burn the chicken. Finally in my later years I sought to solve the problem by building a shield to allow smoke and heat but not too much. As I began to have more and more success with what looks like 'Tin Man's Hat' from the Wizard of Oz, I began to study the effects of grilling and suggested temperatures. I was shocked to learn from the American Institute of Cancer Research and the MD Anderson Cancer Hospitals that two carcinogenic compounds called: HCA's (heterocyclic amines) and PAH's (poloycyclic aromatic hydrocarbons). are formed on the foods being cooked. These compounds are found in the black char that adheres to the meat and while eating this char is tasty, even sought after, it is very unhealthy.
That's why these cancer fighting organizations warn of the dangers of cooking over a very hot fire. They also say that if the temperatures are reduced by 50% then the risk of producing HCA's and PAC's is eliminated! That's when I became compelled to produce this product called The ArmaDee. Before that time I pondered the idea of manufacture because the meat always came out with more flavor, moisture, and tenderness. Every time I used my prototype, I would say to myself, “This works so well that everyone who grills should have one,” but my age is advanced and my plate is full. After I learned of the health aspect of reduced heat at the grill—I became compelled to manufacture even though my experience is in other fields.
As I began to explore manufacturing I had convinced myself to build in the U.S. but after trying every company that would even talk to me and pricing stainless steel sheet I had a build cost nearing $50 each and that is at the volume of $500,000. initial investment in stainless steel. An alternative had to be considered so I sought China since I had imported from there for years. I found an American in Hong Kong who owned a couple factories and thought he might have the answer but after spending $5,000 on molds and never receiving a satisfactory sample on top of changing deals I left China and found a wonderful relationship in India. Every piece is consistent in quality and detail and our communication is of the highest caliber. Furthermore, I have the feeling that this company cares for their employees and sees ArmaDee as hope for the livelihood of each worker.
